Piedra Pómez, celebrates its 38th year of existence under the motto “Year 38, eating sancocho.” It hasn't been easy, especially considering it's made with grouper, which has already begun to be listed on the stock market. Could it have been another Canarian dish? I could, but sancocho is the only one that rhymed with 38. Although a good wine, a ball of gofio, and mojo also go well with sancocho. The dedication of this monographic show to YOMEMATOTOA Laboratories is a logical consequence of our gratitude to these laboratories, which, being 100% Japanese, have a Canarian heart, as reflected almost literally in their promotional slogan, which is nothing other than the deepest sentiment of their founder, our benefactor, Kashito Mematotoa.

Furthermore, we want to pay tribute to them, following the advice of the Treasury, which constantly reminds us that we all must pay taxes. But, above all, because YOMEMATOTOA LABORATORIES has supported, sponsored, and endorsed us unconditionally since our beginnings, when no one gave a penny for us, until today, when the currency is the euro and no one gives a euro for us either. They have known how to see in us what no one else has known, nor have they been able to see—no one knows what will become of us.
